History
Lomo saltado is beef stir-fried in a very hot wok with red onion, tomato, ají amarillo chilli, soy sauce and vinegar, tossed with french fries and served with rice. It is a dish of chifa, the cooking of Peru's Chinese community, which began with workers who arrived from southern China from the 1850s onwards. Using a wok and soy sauce with local potatoes and chillies created something both Peruvian and Chinese. The first versions appear in the late 19th century in Lima, and today it is one of the most popular dishes in the country.
