History
Ají de gallina is shredded chicken in a creamy, mildly spicy yellow sauce of ají amarillo chilli, onion and garlic, thickened with bread soaked in milk, ground walnuts or pecans and grated cheese. It is served over rice with boiled potatoes, black olives and a hard-boiled egg. Food historians connect it to manjar blanco, a colonial-era Spanish dish of chicken in a sweet milk sauce, which Peruvian cooks transformed with local chillies after independence. In Lima it is everyday comfort food, made with hen meat, gallina, traditionally.
