History
Biryani, rice layered with meat and spices and steamed together, came to South Asia with Persian and Mughal influences. In Sindh, the southern province of Pakistan, it became sharper and hotter: Sindhi biryani has chillies, plums, potatoes, yogurt, fried onions, tomatoes and a lot of spice, with goat or chicken. Karachi, the largest city, made it one of its main foods, and biryani shops and weddings serve it by the pot. It has many versions, but the potatoes, sour notes from plums or tomatoes, and spice level are what Pakistanis use to tell it apart from biryanis in India.
