History
Chapli kebab is a wide, flat patty of minced beef or mutton with tomato, onion, green chilli, pomegranate seeds, crushed coriander seeds and maize flour, fried in animal fat. Chapli comes from the Pashto chaprikh, flat, and the shape is often said to look like a sandal, chappal. It comes from Peshawar and the Pashtun lands of north-west Pakistan and eastern Afghanistan, where it is cooked on huge flat pans in the bazaars, such as those of Namak Mandi. It is eaten with naan and a yogurt or green sauce, and Peshawar's restaurants say the flavour comes from beef fat and a large hot pan.
