History
Pavlova is a large disc of meringue, crisp outside and soft like marshmallow inside, topped with whipped cream and fresh fruit such as kiwifruit, strawberries and passion fruit. It is named after the Russian ballerina Anna Pavlova, who toured New Zealand and Australia in 1926. Both countries claim to have invented it, and the dispute has gone on for decades: research has found a 1929 New Zealand recipe, while an Australian chef in Perth said he created it in 1935. Historians have also found earlier European meringue cakes. On both sides of the Tasman, it is the classic Christmas dessert.
