History
Hāngī is the Māori way of cooking food in an earth oven. A pit is dug, stones are heated in a fire for hours, then baskets of meat such as pork, lamb or chicken and vegetables such as kūmara, the sweet potato Polynesian voyagers brought to New Zealand, pumpkin and stuffing are placed on top, covered with wet cloths and earth, and left to steam for several hours. The food comes out tender and smoky. Hāngī are prepared for large gatherings at marae, the Māori meeting grounds, for weddings, funerals and celebrations, and preparing one is a group effort with deep cultural meaning.
