History
Dal bhat is rice (bhat) with lentil soup (dal), and it is the daily meal of Nepal, eaten twice a day by many families. A full plate includes tarkari, a vegetable curry, often a pickle (achar), greens and sometimes meat or yogurt. In mountain trekking regions, porters and guides say "dal bhat power, 24 hour", since the meal fuels hard work and refills are usually free. It is similar to meals in northern India, but the lentils, local greens, and pickles such as timur pepper make it Nepali. In the higher mountains, where rice is scarce, dhindo, a buckwheat or millet mush, takes its place.
