History
Ohn no khao swè means coconut-milk noodles: wheat noodles in a curried chicken broth made with coconut milk and thickened with chickpea flour. At the table each bowl is finished with hard-boiled egg, sliced raw onion, chilli, crisp fried noodles and fritters, then fish sauce and lime. It is one of the most loved noodle dishes of Myanmar, eaten for breakfast or lunch in Yangon and Mandalay, and it is often compared with the khao soi of northern Thailand and Laos, which comes from the same family of dishes. Street sellers sometimes use evaporated milk in place of coconut milk, and some versions mix the noodles dry with the curry instead of serving them in broth.
