History
Laksa is a family of spicy noodle soups born from Peranakan cooking, where Chinese settlers and Malay cooks mixed their kitchens. Penang's version, asam laksa, is the odd one out: no coconut milk, but a sour broth of mackerel cooked with tamarind, lemongrass and chilli, poured over thick rice noodles and topped with pineapple, cucumber, mint, onion and a spoon of sweet prawn paste. It has been sold on the island's streets for generations and is one of the dishes that helped make George Town a byword for hawker food.
