History
Larb is a salad of minced or finely chopped meat or fish, cooked or sometimes raw, mixed with fish sauce, lime juice, chilli, toasted ground sticky rice, shallots and plenty of fresh herbs such as mint and coriander. It is regarded as the national dish of Laos, eaten with sticky rice by hand and with raw vegetables on the side. The word larb sounds like the Lao word for luck, so the dish is served at weddings, house blessings and festivals as a wish for good fortune. Lao people carried it to northeastern Thailand, where it is also a staple. Versions use chicken, pork, duck, beef, buffalo or fish, and in some villages raw meat mixed with blood.
