History
Khao piak sen, "wet rice strands", is a soup of thick, chewy noodles made from rice flour, often mixed with tapioca starch, cooked in a chicken or pork broth so the starch thickens it slightly. It is topped with shredded chicken, fried garlic, spring onions, coriander and lime, with chilli paste on the side. It is one of the most common breakfasts in Laos, sold at morning stalls in Vientiane and Luang Prabang, where the noodles are often cut by hand from a sheet of dough straight into the pot. The dish is a comfort food for Lao families and is also served to people who are sick. It is similar to Vietnamese bánh canh.
