History
Ramen arrived with Chinese cooks. In the late 1800s the Chinatowns of Yokohama and other treaty ports served wheat noodles made springy with alkaline water, in a hot broth. Japanese diners called the dish shina soba or chūka soba, "Chinese noodles", and in 1910 a Tokyo shop called Rairaiken made it a cheap everyday meal. After the Second World War, American wheat imports and returning soldiers who had eaten noodles in China turned it into a national obsession, and instant ramen followed in 1958. Today almost every region has its own bowl: miso in Sapporo, pork-bone tonkotsu in Fukuoka, soy sauce in Tokyo.
