History
The name means "grilled as you like it", and that is the whole idea: a batter of wheat flour and shredded cabbage cooked on a hot iron plate with whatever the cook has, then brushed with a thick sweet-savoury sauce, mayonnaise, seaweed flakes and bonito. Thin flour pancakes sold to children before the war were its ancestor. It became a staple in the hungry years after 1945, when flour was easier to find than rice. Two cities claim it. Osaka mixes everything into the batter; Hiroshima builds it in layers with a crepe, a mound of cabbage and a bed of fried noodles.
