History
Me'orav Yerushalmi, "Jerusalem mix", is chicken hearts, livers and spleen, often with bits of breast meat, fried quickly on a hot griddle with onions and spices such as cumin, turmeric and black pepper. It is served in a pita or on a plate with tahini and salad. Jerusalem's Mahane Yehuda market claims it, and several grill restaurants on Agrippas Street say they invented it in the 1960s or 1970s, using cheap parts of the chicken. The rivalry over who was first is part of the dish's story. It is eaten late at night as well as at lunch, and has spread across Israel.
