History
Jachnun is a dough rolled thin with plenty of butter or margarine, rolled up into logs and baked overnight at a very low heat in a covered pot, so that by morning it is brown, flaky and slightly sweet. It is a Shabbat breakfast of the Jews of Yemen, cooked from Friday afternoon so that no work is needed on Saturday. Yemenite Jews brought it to Israel when most of them migrated in 1949 and 1950. It is served with grated fresh tomato, a hard-boiled egg that cooked in the same pot, and zhug, a hot green chilli paste. Jachnun is now sold widely on Saturday mornings across Israel.
