History
Nasi goreng is fried rice, and fried rice came to the region with Chinese settlers. What makes it Indonesian is the seasoning: kecap manis, a thick sweet soy sauce, plus shallots, garlic, chilli and shrimp paste called terasi, giving a darker, sweeter and smokier result than Chinese fried rice. It was a way to use up yesterday's rice for breakfast and is now eaten at any hour, from street carts to hotel buffets, often topped with a fried egg, prawn crackers and pickles. The Dutch took it home in the colonial era, and the Indonesian government named it one of five national dishes in 2018.
