History
Gado-gado is a Jakarta salad of boiled and raw vegetables, potato, hard-boiled egg, fried tofu and tempeh, and slices of rice cake, all dressed with a thick sauce of ground peanuts, palm sugar, chilli and lime. The name is usually explained as "mix-mix", after the way it is tossed together. It is associated with the Betawi, the original people of Jakarta, though peanut-sauced vegetable salads are eaten across Java. Peanuts, like chillies, came from the Americas. Sold from street carts where the sauce is ground to order, it was named one of Indonesia's five national dishes in 2018.
