History
Vada pav is Mumbai's street food: a spiced potato fritter in chickpea batter, pressed into a soft bread roll called pav with garlic and green chutneys and a fried chilli. The pav itself came with the Portuguese. The snack is usually credited to Ashok Vaidya, who sold it near Dadar station in 1966, as a cheap meal for textile-mill workers. It cost little, travelled well and could be eaten standing on a train platform. Locals call it the Bombay burger, and it remains the city's quickest lunch.
