History
A dosa is a thin, crisp pancake of fermented rice and black-gram batter, and dosas have been eaten in south India for centuries. The masala dosa, folded around a turmeric-yellow filling of spiced potato and onion, is usually traced to Udupi on the Karnataka coast, home of a tradition of temple cooking. Potatoes only arrived in India with the Portuguese, so the filling is the newer part. In the 20th century, cooks from Udupi opened vegetarian restaurants in Bangalore, Mumbai and far beyond, and the masala dosa with coconut chutney and sambar became the classic south Indian breakfast.
