History
Spanakopita is a pie of spinach, feta, herbs such as dill and spring onions, and eggs, wrapped in layers of filo pastry brushed with olive oil and baked until golden. Pies of all kinds, pites, are a big part of Greek home cooking, especially in the mountains of Epirus, where women rolled their own thin sheets. During the long Orthodox fasting periods it is made without cheese or eggs, using only greens. It is eaten for breakfast, lunch or as a snack, in large trays at home or as triangles from bakeries.
