History
Souvlaki means "little skewer": cubes of pork, chicken or lamb marinated in olive oil, lemon and oregano and grilled over charcoal. Ancient Greeks grilled meat on skewers too, and the poet Homer described it, but the souvlaki shop is a 20th-century invention. After the 1950s, and especially in Athens, it became the city's fast food, eaten from the stick or wrapped in a pita with tomato, onion, tzatziki and fries. In Athens a souvlaki often means the pita wrap; in other places the skewer itself. Every neighbourhood has its souvlatzidiko.
