History
Waakye is rice and beans, usually black-eyed peas, cooked together with dried sorghum leaves that turn the rice a deep reddish-brown. It comes from the Hausa communities of northern Ghana, and its name is from the Hausa for beans. It spread south and became a favourite breakfast in Accra and other cities. Waakye sellers serve it on leaves or in bowls with a long list of extras: shito, a spicy black pepper sauce, fried plantain, boiled egg, spaghetti, gari, salad, and fish or meat. Ghanaians argue about which seller is the best in each neighbourhood.
