History
Khinkali are large dumplings with pleated tops, filled with spiced minced meat and herbs, which release a hot broth inside as they cook. They come from the mountains of eastern Georgia, from regions such as Pshavi, Khevsureti, Tusheti and Mtiuleti, where the meat was chopped by hand and seasoned only with onion, salt, pepper and cumin. In the lowlands, coriander and other herbs were added. Khinkali are eaten by hand, holding the knot, taking a small bite to drink the broth, and leaving the knot on the plate. It is good manners to count the knots to see who ate the most.
