History
Khachapuri is bread filled with cheese, and Georgia has a version for nearly every region. Imeretian khachapuri, the most common, is round and filled with young cheese; Megrelian has cheese on top as well; and the boat-shaped Adjarian version from the Black Sea coast has a pool of melted cheese topped with an egg yolk and butter, stirred together at the table and eaten by tearing off the crust. The name joins khacho, curd, and puri, bread. It is so central to daily life that economists at a Tbilisi university created a "khachapuri index" to measure inflation. In 2019 it was declared part of Georgia's cultural heritage.
