History
Llapingachos are thick potato patties stuffed with cheese and fried on a griddle until golden, served with a peanut sauce, fried egg, sausage, avocado and salad. The name comes from Kichwa, the Andean language of Ecuador, and is linked to the word for pressing, describing how the patties are flattened. They are a speciality of the Andean highlands, especially Ambato and the markets of the central provinces, where women fry them on large griddles. Potatoes have been grown in the Andes for thousands of years, and Ecuador has many varieties. Llapingachos are eaten at lunch or as a market snack.
