History
Encebollado is a fish soup of albacore or bonito tuna with yuca, tomato, cumin and coriander, topped with a heap of pickled red onions, which give it its name: "onioned". It is served with lime, chilli, popcorn or toasted corn, and plantain chips. Encebollado is the signature dish of Guayaquil and the coast of Ecuador, and many people consider it the national dish. It is famous as a hangover cure and is eaten for breakfast, especially on weekend mornings, at small restaurants called encebollaterías. The tuna is caught off the Pacific coast. Guayaquil holds contests for the best encebollado.
