History
Mangú is boiled green plantains mashed with butter or oil and some of their cooking water until smooth, topped with red onions softened in vinegar. It is the national breakfast of the Dominican Republic. The full plate, called los tres golpes, "the three hits", adds fried salami, fried white cheese and fried eggs. Its roots are in the mashed plantain and yam dishes brought by enslaved Africans to the Caribbean, related to fufu in West Africa. A popular story says the name comes from an American soldier during the 1916 occupation who said "man, good" on tasting it, but the word is more likely of African origin. Mangú is eaten in homes and at roadside eateries.
