History
Habichuelas con dulce is a sweet, creamy dessert of red beans cooked and blended with coconut milk, evaporated milk, sugar, cinnamon, cloves and sweet potato, often with raisins, served cold with small milk cookies on top. It is made in the Dominican Republic during Lent, especially in Holy Week, and families make big pots to share with neighbours and relatives. It may sound strange to foreigners, but sweet bean dishes are old in the Caribbean and Africa. Every family has its own recipe, and some add ginger or nutmeg. It is so tied to Easter that it is rarely made at other times of year.
