History
Svíčková na smetaně is beef sirloin marinated and roasted with root vegetables, carrot, celeriac and parsley root, which are then puréed with cream into a smooth orange-brown sauce. It is served with sliced bread dumplings (houskové knedlíky), a spoon of whipped cream, a slice of lemon and cranberry sauce. The dish took shape in Bohemian kitchens of the 19th century, when the influence of Viennese cooking was strong, and it appears in Czech cookbooks of the time such as that of Magdalena Dobromila Rettigová. It takes a long time to make, so it is a Sunday or wedding meal, and many Czechs name it as their favourite.
