History
Smažený sýr is a thick slice of cheese, usually Edam or the local Hermelín, breaded and deep-fried until crisp outside and melting inside. It is served with fries or boiled potatoes and tartar sauce. It became widespread in the 20th century, particularly in the socialist era, when it was a cheap meatless choice in canteens and pubs, and it has stayed a favourite of students and late-night food stands. Food stalls on Prague's Wenceslas Square and elsewhere sell it in a bun, as a smažák. Many Czechs abroad say it is one of the things they miss most.
