History
Zagorski štrukli are rolls of very thin stretched dough filled with fresh cow's cheese, eggs and sour cream, cut into pieces and either boiled or baked with cream until golden on top. They come from Hrvatsko Zagorje, the hilly region north of Zagreb, and from Zagreb itself, where they are served in old restaurants and at home. The dough is pulled by hand across a floured tablecloth until it is almost transparent, the same technique used for strudel in Central Europe, and the dish is closely related to Slovenian štruklji. Štrukli were long a Sunday and holiday food in rural Zagorje. In 2007 Croatia added the traditional preparation of Zagorski štrukli to its list of protected intangible cultural heritage, and Zagreb holds a yearly štrukli festival.
