History
Pašticada is beef braised for hours in a dark, sweet and sour sauce, and it is the festive dish of Dalmatia, the Croatian coast around Split. A large piece of beef, usually eye of round, is pierced and stuffed with garlic, cloves, carrot and bacon, then marinated overnight in wine vinegar. It is browned and simmered slowly with onions, root vegetables, dried plums, red wine and prošek, the sweet dessert wine of the coast, until the sauce is thick and glossy. The meat is sliced and returned to the sauce. Dalmatian families make it for weddings, saints' days and Christmas, and they serve it with homemade gnocchi or pasta. Each household guards its own version, and the long preparation, often started a day ahead, is part of the occasion.
