History
The bandeja paisa, "paisa platter", is a huge meal on one plate: red beans cooked with pork, white rice, minced beef, chorizo, crisp pork belly called chicharrón, a fried egg, ripe plantain, avocado and a small arepa. Paisa refers to the people of Antioquia and the coffee region around Medellín. Its origins lie in the food of the muleteers and farm labourers of the 19th and early 20th centuries, who needed a lot of calories for working in the mountains. Restaurants in Medellín made it a symbol of the region in the second half of the 20th century, and it is meant for lunch, not dinner.
