History
Arepas are round cakes of maize dough, cooked on a griddle, baked or fried. Indigenous peoples of the northern Andes and the Caribbean coast made them long before the Spanish, grinding maize by hand. They are eaten every day in Colombia, and every region has its own: thin and plain in Antioquia, filled with egg and fried on the Caribbean coast as arepa de huevo, or sweet with cheese in Boyacá. Venezuela shares this tradition and has its own famous stuffed arepas. Since the mid-20th century, precooked maize flour has made them quick to prepare at home.
