History
Num banh chok, often called Khmer noodles, is fresh rice noodles served with a green fish gravy made from lemongrass, turmeric and kaffir lime, topped with fresh herbs, banana flower, cucumber and beans. It is sold in the morning by women carrying baskets on a pole across their shoulders, or at markets. The rice is soaked, ground and pressed through a mould by hand to make the noodles, a process done in villages. Siem Reap and Kampot have their own versions, and there is a red curry form eaten at weddings. It is Cambodia's typical breakfast.
