History
Kuy teav is rice noodle soup in a clear broth of pork bones, with pieces of pork, meatballs, offal or seafood, and served with lime, chilli, bean sprouts and herbs. The noodles and the name came with Chinese immigrants, especially Teochew people from southern China, who settled in Cambodian towns over centuries and opened noodle shops. In Phnom Penh it is eaten as breakfast at street stalls and shops from dawn. Similar dishes exist in Vietnam (hủ tiếu) and Thailand, but the Cambodian broth has its own sweetness and the custom of dressing the bowl at the table.
