History
A lamington is a square of sponge or butter cake dipped in chocolate icing and rolled in desiccated coconut, sometimes cut in half and filled with jam or cream. It is named after Lord Lamington, governor of Queensland from 1896 to 1901, and stories say it was invented by his chef or his staff in Brisbane around 1900, when unexpected guests arrived. Early recipes appear in Queensland newspapers in 1900 and 1901. Lamington drives, where volunteers make and sell trays to raise money for schools and clubs, are an Australian tradition, and 21 July is National Lamington Day.
