History
Empanadas, pastries filled and baked or fried, came to South America with the Spanish, who had them from Galicia and from Arab cooking. Each Argentine province has its own, and the north-western province of Salta is especially proud: its empanadas salteñas are small and juicy, filled with hand-cut beef, potato, spring onion, hard-boiled egg and cumin, and baked in a clay oven. Neighbouring Tucumán claims to make the best ones, and the two provinces' rivalry is a national joke. They are eaten by hand at parties and patriotic holidays, washed down with wine.
