History
Dulce de leche is milk and sugar cooked slowly for hours until the mixture thickens and turns a deep caramel colour. Argentina tells a story about a maid in 1829 who forgot milk and sugar on the fire during a meeting of two political leaders, but similar sweets existed earlier in Spain, Chile and elsewhere, and Uruguay also claims it as its own. Both countries of the Río de la Plata eat it daily: spread on toast, layered between biscuits to make alfajores, in pancakes and in ice cream. Argentina declared it part of the nation's culinary heritage in 2003.
