History
Rechta is a dish of very thin homemade noodles, steamed rather than boiled, served with a white sauce of chicken, chickpeas, turnips and courgettes, flavoured with cinnamon. It is the emblematic dish of Algiers and the Algerian capital's region. The name comes from the Persian rishta, thread, a word that travelled with the noodles across the Islamic world. Rechta is made for celebrations: it is served at Eid, at Ashura and for the birth of a child or the first fasting day of a young person. Making the noodles by hand, rolling and cutting the dough into thin strips, then steaming them in a couscoussier, is time-consuming and a source of pride.
