History
Garantita, also called calentica, is a thin, soft baked custard of chickpea flour, water, oil and eggs, cut into squares and sold hot from large trays. It is sprinkled with cumin and harissa and often eaten inside a piece of baguette. It is the classic street food of Oran and western Algeria, sold outside schools and in markets. It came with Spanish and later French rule in the city; its names come from the Spanish caliente, hot. It is related to Ligurian farinata and to socca from Nice, but in Algeria it became softer and more custard-like. Garantita is cheap, and many Algerians remember it as their favourite after-school snack.
