History
Bint al-sahn, "daughter of the plate", is a round cake of many thin layers of buttery dough, baked until golden and served warm, drizzled with honey and sprinkled with black seeds. It is also called sabaya. It is one of the most loved Yemeni dishes, eaten at weddings, celebrations and when guests arrive, and often served with tea. The dough is stretched very thin and brushed with clarified butter, samn, between layers, which takes skill, so it is mostly made at home rather than in restaurants. Yemeni honey, especially sidr honey from Hadhramaut, is famous and expensive, and a good bint al-sahn is a way of showing it off.
