History
A chivito is a big sandwich of thin grilled beef steak with ham, mozzarella, bacon, lettuce, tomato, olives, a fried egg and mayonnaise in a soft roll, served with fries. It is the national dish of Uruguay. The usual story says it was created in 1946 at the restaurant El Mejillón in Punta del Este, when an Argentine customer asked for chivito, roast kid goat, which they didn't have; the owner, Antonio Carbonaro, served her a beef sandwich instead, and the name stuck. There is also a chivito al plato, served on a plate without the bread. Montevideo's restaurants and parrillas compete over the biggest and best.
