History
Gumbo is Louisiana in a pot: a dark roux of flour cooked in fat until it is the colour of chocolate, the "holy trinity" of onion, celery and green pepper, and seafood, chicken or andouille sausage, simmered and served over rice. It is thickened with okra or filé powder, made from dried sassafras leaves. The name probably comes from a West African word for okra, brought by enslaved people, and filé was a Choctaw ingredient, while the roux is French. The first written mentions come from the early 19th century. New Orleans Creole gumbo often includes tomato; Cajun gumbo in the countryside does not.
