History
Bibimbap simply means "mixed rice": a bowl of warm rice topped with seasoned vegetables, often beef and an egg, all stirred together with chilli paste just before eating. Early written mentions date to the late 1800s, and several stories explain its origin, from mixing leftovers on the eve of the lunar new year to sharing the food from ancestral rites. The city of Jeonju in the south-west made it a regional pride, cooking the rice in beef broth and adding bean sprouts and raw beef. Dolsot bibimbap, served in a sizzling stone bowl so the rice crisps at the bottom, is a later favourite.
