History
Kaya toast is toasted bread filled with kaya, a sweet jam of coconut milk, eggs and sugar flavoured with pandan, and slabs of cold butter. It is served with soft-boiled eggs seasoned with dark soy sauce and white pepper, and a cup of kopi, local coffee roasted with sugar and margarine. It is the classic breakfast of Singapore's kopitiams, traditional coffee shops. The dish is traced to Hainanese cooks who worked on British ships and in British households in the 19th century and later opened coffee shops, adapting toast with jam to local tastes. Chains such as Ya Kun, which began as a stall in 1944, made it a national habit.
