History
Pljeskavica is a large, flat patty of minced meat, often a mix of pork, beef and lamb, seasoned with onion and salt and grilled over charcoal. It is one of Serbia's national dishes and the classic grill food of the Balkans. The town of Leskovac in southern Serbia is famous for its grill culture, and its Roštiljijada, a grill festival held every summer, draws large crowds and has made some of the biggest pljeskavicas on record. The patty is eaten on a plate with raw onion, kajmak (a rich clotted cream) and ajvar, or folded into lepinja, a soft flatbread, as street food. Variants include gourmet pljeskavica stuffed with cheese and ham, and the hajdučka version wrapped in bacon. Grill kiosks sell it day and night.
