History
Yassa is chicken or fish marinated for hours in lemon juice, mustard and a mountain of onions, then grilled and simmered in the marinade until the onions turn soft and golden. The result is sharp, sweet and savoury at once, and it is eaten over white rice. It comes from Casamance, the green southern region of Senegal, and has become one of the dishes most associated with the country, along with ceebu jën. Yassa ganaar uses chicken, yassa jën fish. It is also popular in The Gambia, Guinea and Mali.
