History
Sinigang is a sour soup, and sourness is its point. In Tagalog cooking the souring agent is usually young tamarind, simmered with tomatoes and onion, then pork ribs, prawns or milkfish and vegetables such as water spinach, radish, okra and long beans. Other regions use guava, green mango, calamansi or the fruit of the kamias tree. The name comes from a Tagalog word for stewing. Families serve it with rice and a dip of fish sauce, and many Filipinos abroad say it is the dish that tastes most like home.
