History
Stamppot means "mash pot": potatoes boiled and mashed together with one or more vegetables, such as kale (boerenkool), sauerkraut (zuurkool), endive or carrots and onions (hutspot). It is the Dutch winter dish, served with a smoked sausage (rookworst) or bacon and a well of gravy in the middle. Potatoes only became a common food in the Netherlands in the 18th and 19th centuries, and stamppot grew from farm cooking that made them stretch. Hutspot has its own story: Leiden eats it every 3 October to remember the end of the Spanish siege in 1574, when, the town says, a pot of stew was found in the abandoned Spanish camp.
